Ham and Cheese Omelet

Ingredients
3 oz ham deli style (deli style chicken can also be used) [2P]
1 oz mozzarella cheese skim [1P]
1/2 cup egg substitute [2P]
1 cup onion chopped [1C]
3 cups mushrooms [1C]
1 1/4 cups tomatoes chopped [1C]
1 cup grapes on the side [2C]
1 2/3 teaspoon olive oil [5F]
spices:
1 teaspoon dill
1 teaspoon thyme
1 teaspoon turmeric
salt and pepper for taste

Directions
Saute onion, mushrooms and ham in olive oil until tender.
Add egg, spices and cheese until cooked.

Iced Cappaccino Snack

Ingredients:
- 4 oz. Decaf Irish Cream Espresso (may substitute any flavor decaf espresso)
- 7 oz. steamed milk (1 block protein, 1 block carb)
- 2 tbsp. dollop whipped light cream (1 block fat)
- Splenda sweetner to taste (may substitute any other non-aspartame sweetner)
Directions:
Prepare espresso and steamed milk with cappuccino machine. Combine espresso, steamed milk, and desired amount of sweetner in a heat safe container. Refrigerate (best served very cold). When ready to drink, stir chilled ingredients, pour over ice, and add dollop of whipped light cream.

Jellied Fruit Salad With Walnuts


This is one of the desserts served on the 1998 Zone Cruise. See a sampling of menus under What’s new in the Zone, Zone Cruise.
4 envelopes Knox Unflavored Gelatin (4 protein)
1 kiwi fruit, peeled and diced (1 carbohydrate)
1 cup raspberries (1 carbohydrate)
1 cup strawberries, diced (1 carbohydrate)
1/2 cup seedless grapes, halved (1 carbohydrate)
4 teaspoons walnuts, chopped (4 fat)
2 cups water
1 tablespoon banana extract
1 tablespoon orange extract
1/2 teaspoon strawberry extract
Mint leaves
In saucepan, place gelatin and water, stir until dissolved, then add fruit and extracts. Heat to a simmer, stirring gently for 10 minutes until the raspberries dissolve. Pour liquid into eight-inch by eight-inch by two-inch pan and let cool. When salad has set, place in four serving dishes and garnish with mint leaves.
Note: when choosing berries, look for those that are medium-sized and uniform in color. They should also feel solid to the touch and not be leaking juice.

Kielbasa and Green Beans


8 oz Hillshire Farm Lean & Hearty Kielbasa
1 can (14.5 oz) Mexican Recipe Stewed Tomatoes
1 cup boiled mushrooms (8 oz raw)
6 olives chopped
2 cups green beans
Boil mushrooms. Slice kielbasa, heat in frying pan with stewed tomatoes, olives and boiled mushrooms. While this is simmering, cook green beans. Serve kielbasa mixture over beans. Yields two 3 block meals.

Kielbasa 6 protein 4 fat
Stewed tomatoes 3 carbs
Mushrooms 1 carb
Olives 2 fat
Green beans 2 carb
